Lately, I have become a little obsessed with all things avocado. Although they are usually expensive to buy, Aldi's will run specials on packs of avocados from time to time. Unfortunately, there was only one pack left when my hubby was at the store last night.
I think I will use these avocados to add to my corn, black bean, and tomato salsa.
It's such an easy recipe to make;
Black Bean, Corn, Tomato, and Avocado Salsa:
1 can black beans, drained and rinsed
1 can corn, drained and rinsed
3-4 medium tomatoes, diced
1-2 avocados, peeled and diced
Fresh cilantro, to taste
Lime juice, to taste (I have used lemon juice before, when out of lime juice)
Pinch of garlic salt
Dash of black pepper
Goes great with tortilla chips, or as a topping for Mexican food.
